Sometimes the batter is a little bit too runny, and sometimes it is too dry, and both have a really hard time sticking onto the shrimp... which makes for a royal mess of non battered shrimp, and some burnt, crispy bits of batter. Not. Good.
But this recipe is the perfect way to get that nice, crispy, perfectly golden brown battered shrimp! Plus, it has that delicious coconut flavour that everyone loves and it will taste just as good if not better than at the restaurant, or any boxed coconut shrimp you buy in the store, because you made it yourself, in your own kitchen and can tweak the flavours to your liking. The author of the recipe on A Family Feast, used coconut milk for the batter as well as the panko bread crumbs. It helped the batter stick together really well and really gave it a nice coconut flavour.
Plus, coconut is so good for you! It has perfect fats, and vitamins and minerals for our bodies, and shrimp are also are great, lean and healthy source of protein, so over all they would be a wonderful addition to any meal.
