Peaches grow abundantly in Canada and the United States, most of the ones in Canada come from British Columbia, and most of the ones from the United States come from California. There are so many different things to do with peaches, like just eating them fresh and raw, or you can grill them or pan fry them and make a nice dessert with honey and some ice cream. You can also make some nice pies or cobblers out of them, even some peach jam or jelly or preserves. They are nice to freeze for smoothies and great to can for future use as well.
This ice box pie is layers of peaches and cream spread over gingersnap cookie crust and topped with whipped cream of course! The pie is then put into the fridge and let to set for a while until the layers become nice and soft and easy to cut through. Icebox cakes or pies are similar to a trifle, in that they are layers of a whipped cream or custard and usually fruit.
