Slow Cooker Triple Cheddar Mac an Cheese
Slow Cooker Triple Cheddar Mac & Cheese is a comfort food for those wet and rainy, cold and awful fall days when you just feel chilled through and through and need something to, well, bring you some comfort. On those days, turn up the heat, snuggle under a blanket, and watch a great Meryl Streep movie with a bowl of this yummy stuff. This dish is loaded with cheese, so easy does it on the servings. Make up a big batch of your favorite dark greens to go with it, and you’ll have a pretty well balanced meal.
Like many cheeses, cheddar’s name originated where the cheese did, in England. Cheddaring really refers to a process, rather than a flavor, like Parmesan, or ricotta. To cheddar a cheese, the whey is strained off the cheese, then cut and stacked, and regularly turned and re-stacked while the cheese is still hot or a high temperature is maintained. This turning and stacking process is called cheddaring. Once that step is done, the cheese can be made in to several variations including ordinary curd cheeses, that so many people like for its squeaky texture and light flavor, to aged cheddars that have rich and bold flavors with lots of sultry notes that make them fabulous to eat. Cheddars are also often made with other ingredients, such as apple or wood smoke, and these variations are also delicious.
This dish is loaded with cheese, and that makes it a hearty meal. Be careful not to over cook the noodles, which are cooked before they go in to the slow cooker. That’s because you don’t want them to turn to mush as they slow cook. So slightly undercook them by one or two minutes, until they are just barely ‘al dente.’
