3 Ingredient Cookie Dough Truffles

These truffles have the same texture and flavour of regular cookie dough, but they are made to be a bit healthier. Amanda from Running With Spoons created her treats with no grains, eggs, oil or refined sugar. They are also gluten-free and vegan so they can be eaten by pretty much anyone, even those with allergies and food sensitivities. It's so great that there are more and more healthy dessert recipes being made these days. People are realizing that desserts don't have to be packed with a ton of sugar and dairy to be delicious, even though those dessert recipes are still amazing to have once in a while. Eating a lot of refined sugar regularly has been shown to lead to health problems and can become very addicting too. That's why people are choosing to switch over to using healthier sweeteners like dates, coconut sugar, honey or maple syrup. Dates actually have some great health benefits too including a lot of good fibre which is important for healthy digestion. You can even try date sugar in replacement of regular sugar if you're looking for a healthier option.
The other ingredients in this recipe are, of course, chocolate and then some almond flour. Choose a nice, dark chocolate for a healthier option for your dessert recipes. A dark chocolate with a higher cacao content is going to actually have some health benefits too like some magnesium. You can also make your own chocolate out of cacao paste and some coco butter or coconut oil and some sweetener of your preference. The dates hold the almond flour together creating the cookie dough for the truffles. Almond flour seems to add such a nice buttery flavour to desserts and makes the dough creamy and rich. Almonds are also great for our health and have a lot of good protein and vitamins in them. You can buy almond flour at the store, or you can make your own in a food processor or a high powered blender. Just be sure you don't blend it for too long, or you'll end up with almond butter, which is also a great food to have around.
To make this yummy recipe, simply put the dates and almond flour in a food processor or a high powered blender. Then just blend them on a high speed until they have mixed together to make a sticky dough. You can also add in one tablespoon of almond milk to get the right sticky, dough-like texture. Use a tablespoon to measure out the dough and then roll it in your hands to create small balls. Place the balls on a parchment paper lined cooking tray or platter and set them aside until later. Next, you'll create the chocolate coating. Simply melt the chocolate in the microwave or use a double boiler. Make sure you stir it frequently so that there are no lumps in the chocolate. You want a nice, smooth consistency. Then take some toothpicks and poke one into a dough ball and then dip it into the melted chocolate until it's completely covered. Once the ball is covered in chocolate, return it to the tray. Repeat until you have all of the dough balls covered in chocolate. You can then sprinkle the balls with chocolate shavings, sprinkles, coconut or anything else you'd like to try. Put them in the fridge for at least 15 minutes, and then you can enjoy them.
