Salads don't have to be as boring as everyone thinks and this Ahi Tuna Poke and Mango Salad is far from boring. Gone are the days of dousing ice burg lettuce and tomatoes in ranch dressing, although if you love that then keep enjoying, but it you are looking for something a little different than this simple salad recipe will give you new salad inspiration. The original salad recipe comes from the author Heidi's favourite sushi restaurant in Salt Lake City. The restaurant offers a salad like the one you see here, but usually the tuna is seared before serving.

Heidi always asks for the tuna fresh as you would eat it in regular sushi. She decided to give it a go and make this salad at home and share it with all of us so we can enjoy this salad recipe as well. The best healthy salads are super easy to make at home, just be sure you are using fresh, good quality ingredients. You especially want to make sure that your fish is good quality especially if you are eating it raw like Heidi recommends. She bought her tuna fish fresh from her favourite sushi restaurant but she also says you can purchase it at a fish market or high end grocery store. You want to be sure it is very fresh as fish can spoil fairly quickly. Also make sure that you use the fish right away, so purchase it the day you are planning to make the salad. The other ingredients compliment the fish and each other so nicely.

You have the deliciously sweet mango, and the mixed lettuce as well as some yummy sea weed salad and some seaweed chunks to give it a true sushi flavour. The combination of sweet and savoury flavours and fresh, healthy ingredients makes this one of the best healthy salads to choose for lunch or a light dinner. This would be a perfect dish to serve for a summer dinner gathering, everyone would be so impressed with your culinary genius even though it only would take you a short while to make. The dressing for the salad is nice and simple, you don't want anything too overpowering for this salad recipe since the flavours are already so prominent. The dressing is made up of some ponzu sauce which is like soy sauce but with a more citrus flavour. There is also some wasabi for some extra spice which would balance out the recipe perfectly.
