We will first give you a substitute if you want to make your own homemade Amish Noodles.
For one pound of noodles, you need 6 egg yolks, 6 Tablespoons water, 3 cups flour,(more or less) and 1/2 teaspoon salt. You just beat the egg yolks with the water, stir in the salt and add enough flour to work into ina stiff but workable dough. You can add more water if needed. Next divide into four sections and working in these smaller batches, use a rolling pin to roll into a thin layer. Lay onto a clean tea towel and set aside to dry. Once the dough has dried out, stack them together and cut into wide strips. You can cook right away, or if you want to use at another time, you can leave them to sit to dry out more in a dehydrator for about 5 hours. Once totally dried out, then they can be stored in an airtight container. To cook the noodle, bring 3 quarts of water to a boil and add 1 1/2 tablespoons of salt to the water.Add 1/2 of the noodles at a time and cook for 8-10 minutes stirring. Drain the water and serve.
