Angel Hair Pasta with Tomatoes and Parmesan
This recipe makes a terrific summer dish of Angel Hair Pasta with Tomatoes and Parmesan. There are a number of things that make this dish unique, and why you might consider it a summer time offering. First, it is made with Angel hair pasta, a pasta that, although made of the same ingredients as any pasta, seems lighter and more summery. Second, this recipe includes fresh tomatoes, so make this dish when tomatoes are at their best—that is, in late summer. Fresh tomatoes give an entirely different flavor to a dish than canned ones do. Canned tomatoes are fabulous and have a thousand recipe uses, but fresh tomatoes in pasta bring it a clean and light flavor that is difficult to compare to what canned tomatoes offer (no matter how good they are!). Third, this dish has no meat in it. Pasta made with fresh tomatoes and without meat becomes much lighter fare, generally.
This recipe uses fresh garlic with the fresh tomatoes. Do not skimp on either, or use canned or dried or anything other than fresh for both of these ingredients. They will infuse this dish with a unique and summery flavor that you and your family will just love. If your family just loves its meat, prepare something to serve on the side, such as chicken or even steak. Then, serve it separately, as the Italians do.
If you have vegetarian friends you would like to invite for dinner, this is a perfect compromise meal. Replace the chicken broth with vegetable broth, and it is an entirely vegan offering. Then serve meat to the rest of the guests. Everyone will feel welcome and accommodated. That is the best kind of meal to serve. And this one will become a regular in your summer menu, once you try it out.
