Apple Cinnamon Cupcakes are good enough, wholesome enough, and light enough to serve for breakfast, eat as a snack mid-afternoon for a pick me up, or indulge in late night knowing there will not be any sugar rush with this cup cake recipe. That is because they are made entirely from scratch and are really a cinnamon bun with apple cinnamon filling. Since breads contain almost no sugar, even the sweet varieties have very little, you know this bread will also have little sugar. And a yeast bread, made from scratch, is a fabulous way to start your day, use mid-day for a little energy boost, or finish the night so that you do not wake up in the middle of the night with a rumbling tummy. Apples are a great fruit, under sung for their great nutritional contribution. Apples can help to slow down sugar absorption, helping to keep blood sugars level.
