Apple Cranberry Walnut Salad

Try this updated version of the Waldorf salad here as an Apple Cranberry Walnut Salad, with a lighter style of dressing. It is fabulous. This is a great summer time lunch dish. Serve lots, as it is really delicious and people will eat lots of it. The big difference in the salad ingredients is the cranberries in the newer version. The original Waldorf salad would have used raisins. Both are delicious, although the cranberries (and do not use the sweetened variety) are sharper in flavor and give a pretty color twist to the salad.

As well, the dressing on this version is light and snappy and tart, quite different from the creamy and full fat dressings we made years ago. Here, apple juice is the key player, blended a vinegar, honey and oil to make a great blend to toss the salad. Apples and walnuts are both big parts to this salad. The crunch of the apple (here, Granny Smith’s are used) against the slightly dry and bitter walnuts is a great combination. Apples are also very good for you, full of vitamin C and fiber, especially if you leave the skin on. Walnuts are one of the very best nuts that you could eat. You could also toast them for this recipe. Toasting increases the buttery flavor in the nut, and tames the slightly bitter edge of the walnuts. It takes only a few minutes to do. Walnuts are also loaded with good fats, lots of fiber, potassium, calcium, magnesium and vitamin E. All nuts are a great source of nutrients, with walnuts one of the very best.
