Apple Pie Cookies
Apple pie is a favourite for a lot of people, so Apple Pie Cookies would be sure to be a hit too wouldn't they?! These awesome little cookies look so pretty too, just like a little mini apple pie that has been flattened down! So adorable! Apples are in season now, so this is a perfect recipe to use a lot of your fresh picked or farmer's market apples. The author of Oh, Bite It, says that her absolute favourite part of eating any fruit pie is to have those nice pieces of caramelized pie crust. So, she decided to make a batch of cookies that would have this lovely flavour in every bite!
They look like they took so much meticulous work! Getting all of the cross hatching for the lattice of the pastry on top of each and every cookie. I would love to try making this recipe, but wouldn't make it all the time probably since it just seems super time consuming. But the way she has done it, looks like it didn't take her too much time or effort. It actually looks like they would be pretty fun to make! They would be awesome for fall time!
She used the pre made Pillsbury pie crusts, which cuts out the time it takes to make a pie crust from scratch and roll it out evenly. These crusts are all ready to go and nice and evenly rolled out so that they are nice and flat. Perfect for making the lattice toppings out of! She actually doesn't do each and every cookie individually, so it wouldn't be as time consuming as you might think. The lattice is done on top of the bottom crust with the apple pie filling on it and then cut into the nice little individual cookies! I would love to try these! Would you?
