Avocado Bacon and Eggs
Like Kristyn on Lil Luna, I love breakfast foods. If I don’t start my day off with something delicious, it usually shows for the rest of the morning. Kristyn’s Avocado bacon and eggs will ensure that doesn't happen.
This is a quick breakfast treat and it involves one of my absolute favourite fruits, not to mention ingredients, in the world: the avocado. I still feel strange calling an avocado a fruit because it just tastes so different from any other fruit out there. I know, it has a big pit like a fruit, and grows on a tree, like many fruits, but there is just something about it that doesn't qualify it as a fruit in my mind. For me a fruit is something you can serve with ice cream. I love you avocado, but seriously, with ice cream? No thanks. Anyway, back to business. I usually serve avocado with my eggs to begin with, so this recipe is a complete no-brainer for me. Not only that, but the avocado doubles a dish for this recipe, which I find adorable and I love cooking things inside of other edible things!
One thing I do not like about breakfast, however is the clean-up and this invention has that covered. There is virtually no mess required to make this. No bowls full of batter, frying pans full of egg, cutting boards covered in crumbs or juices. Just a handful of your breakfast basics, thrown in the oven at 425 for 15 minutes, no waste created, the perfect breakfast.
Now the recipe calls for bacon, and I like bacon, but I feel like your standard bacon could definitely be improved upon here, perhaps some pancetta, if you are craving something a little bit thicker, or some turkey bacon, if you want something a bit lighter and less fatty. If I'm having cheese with my breakfast, I like it to be a stronger cheese, liked an aged cheddar, so I think something along those lines, or a Gouda, maybe even some blue, if that’s your thing. I know I love a good bacon and blue cheese burger, why not crumble some blue or Gorgonzola on top of this.
