Bacon Avocado Tomato Pasta Salad

Bacon, avocados, tomatoes, and pasta lightly finished with a rich avocado ranch dressing make the Bacon Avocado Tomato Pasta Salad the perfect dish to have in your arsenal for those lazy summer nights where cooking a full meal for you and your family is the last thing on your mind.

Mary from Bare Feet in the Kitchen borrowed this recipe from her friends website a while ago and it was just so simple and the flavours went together so well that she decided she would share this simple, but in no way, unsophisticated salad.

Normally, when the entre is salad, I end up prejudging it and worrying that I am going to wake up at 3 AM in need of a late night snack. However, the pasta, bacon and rich avocado really do make this a filling summer

Bacon and avocado are always an irresistible pairing to me. I've even taking to substituting avocado in my BLTs. Marys recipe uses shell pasta, but I personally like a bit bigger of a pasta when I'm making it in a salad, I just find shell pasta hard to skewer sometimes and the thickness and sturdiness of a pene, corkscrew or bow-ties means my forkfuls end up looking a little more hearty. For a gluten free pasta alternative, Mary recommends quinoa pasta noodles, which I have never tried, but I love quinoa, and Im always interested in trying pastas that use different, interesting flours, so I might just end up preparing this gluten free, anyway.

Marys recipe serves 4 to 6 people, but I am always a big fan of doubling up on things with these kind of dishes because I like to have fast, healthy, hearty options on hand in the fridge multiple days in a row.
