Baked Meatball Parmesan

When we were kids, we always begged for the meatballs to be “bigger, mom, bigger.” It was so fascinating to watch her blend the meat and other ingredients and form them in to balls that she then baked. We loved when they came out from the oven, smoking hot, brown and spitting, and could hardly wait to have them for dinner. Whether they were served with a mushroom gravy, smashed potatoes and greens, or put in to a casserole, tossed with pasta and tomato sauce, it made no difference. We gobbled them up with joy and pleasure.

The kids will love this dish. You may still want to serve pasta on the side, since it is such a great complement to the dish, but dishing out whole meatballs will be a definite smash hit.
This recipe is super easy to make, and will take only a few minutes to put together and toss in the oven. Make it for a Friday night and surprise the kids with it in front of the television. Make pasta optional. Odds are, though, they will still want the pasta, especially if it is spaghetti. There are, after all, spaghetti races still to be won.
