Looking for a fast, easy breakfast that’s still healthy and hearty enough to start the day? Then you might want to try this awesome recipe for Baked Oatmeal!

This breakfast is wonderful for any time of the year, but it’s particularly perfect for the winter months because it’s hot when it comes out of the oven – it will keep you warm on the way to work, school, or curled up with a book on your day off! Another lovely thing about it is that you can take it with you – just wrap it in a napkin and off you go! If you’re in a hurry, grab one of these and your coffee to-go mug and you’re all set. This recipe for Baked Oatmeal calls for raisins, but you can add anything you like! Nuts, dried cranberries, and chocolate chips are just a few other yummy ideas. Or how about all of the above?

And where did this recipe come from? We have Kristin over at the “Frugal Antics of a Harried Homemaker” blog to thank. Kristin’s grandmother was a wonderful cook who had a restaurant in her own home when Kristin was a kid. Talk about inspiring! This had an indelible impression on Kristin when she was growing up, so there’s really no surprise she’s following in her grandmother’s footsteps, as well as her Mom’s – with a modern flair, that is, with this lovely blog!

Kristin’s focus for “Frugal Antics” is just what it sounds like – she is saving money when she’s cooking and she wants to help you save money too! Most of her recipes cost less than $10 and can feed from six to eight people – sometimes more. Check out her blog if you want to eat cheap, healthy, and well – starting with yummy Baked Oatmeal!
