Baked Potato Wedges

Baked potato wedges have been around for a long time, and there are many ways to prepare and bake them. Perhaps the easiest way of all is simply to wash and cut the potatoes without peeling the skins, add olive oil and some salt and pepper and then bake them. This is a great way to eat potatoes, simple and simply delicious.

Potatoes are a wonderful and humble veggie that we sometimes take for granted (but we should not). It can be baked, boiled, grilled, foil wrapped, mashed and smashed, stuffed, and prepared in so many ways it is hard to keep track. Potatoes are used in all kinds of recipes including breads to create texture and give moistness, cakes to do the same and plenty of recipes in between. You can make entire soups from potatoes and have a rich and filling dinner from them, or add them as a side to any meat, chicken or fish that you can think of. Smash them with garlic and mushrooms and stack a steak on top of it, and you have a feast. Potatoes are just that great. Of course, as an Irish woman perhaps it is in my blood to love potatoes. Still, there are few dishes where potatoes do not work and few seasonings they cannot take on. Curried potatoes are one of my favorite dishes, or Greek potatoes, where they are cooked with olive oil, lemon and rosemary, or just plain mashed with lots of butter, sour cream and cream cheese.

Baked Potato Wedges is one of many ways to prepare this terrific and healthy vegetable. It is simple enough that you can eat potatoes every day and never get tired of them, and sophisticated enough to be served with the finest birds, meat or fish at the best of tables.
