Balsamic Glazed Caprese Chicken

This balsamic glazed Caprese chicken recipe is a delicious combination of baked chicken thighs cooked in a sweet, garlic balsamic glaze with cherry tomatoes, fresh basil and topped with melted mozzarella cheese. The balsamic glaze is an easy recipe to make, just some balsamic vinegar and some brown sugar brought to a simmer, stirring the glaze occasionally until it has thickened which should take about five to six minutes.
