Beef Pot Pie Biscuits
This is a great home made recipe for beef pot pie biscuits, or perhaps more clearly, for beef pot pie and biscuits made on top. This is a lovely way to prepare a meal (although perhaps my Irish roots are showing here). But a biscuit cooked on top of a meat dish is one of my favorite meals. The biscuit emphasizes the home made nature of the dish, which I always prefer, and the biscuit lets you sop up the gravy without asking for a piece of bread to do so (and looking like you have no manners). I always regret having to let the sauce stay on the plate when I have a really scrumptious meal that has plenty of delicious sauce (where all the flavor is) and I have nothing to sop it up (and I cannot very well lift the plate up and start licking it . . . or could I?). In any event, the biscuits add plenty of nutrition and flavor and are just a plain, lovely addition to any meal.
Here the beef pot pie has some great ingredients too. There are the usual potatoes, of course, and you can chop them without peeling the skin off to provide some great fiber and good nutrition, but this dish also includes sweet potatoes. Here is a potato that is also worth eating more often. It is chock full of the anti-oxidant, beta carotene, and has more in it than many other orange colored veggies (not more than pumpkin, which holds more of this component than any in the ‘orange’ category). Sweet potato can raise levels of our vitamin A, especially in children, because it so filled with that vitamin. Serve this veggie with a tiny amount of fat, which increases the body’s ability to uptake of the beta carotene the sweet potato contains. Sweet potatoes contain a broad range of extraordinary health benefits, and are a great food to include regularly in our family’s eating plans.
This dish contains potatoes, sweet potatoes and peas, another nutritious legume, and one that kids almost always like to eat. Served with fresh biscuits on top, this will be a delicious and nutritious meal for you to have tonight. Enjoy.
