Try this easy no bake treat from The Midnight Baker. This Italian cake is the perfect, light and creamy pineapple dessert with a refreshing tropical flavour. Then it's topped off with more creamy whipped topping and coconut. A great dessert recipe for the summer since it's light, but also since you don't have to turn on your oven to make it. When temperatures rise in the summer, it's important to keep our homes nice and cool, so usually turning on the oven isn't a good idea. That's when no bake treats like this one come in handy if you want a nice, sweet baked treat but don't want to do any baking. No bake treats have been made for centuries, and there are various types of no bake dessert recipes. There are no bake cake recipes like this, dessert salads, and icebox cakes. The icebox cake is much like a trifle, and it first started being made during World War I in the United States. It became very popular in the 1920s and 1930s because it was so easy to make and it included many premade ingredients. An icebox cake will set in the fridge instead of baking in the oven. So if you find that the consistency of the dessert is a little runny at first, don't worry because once you put it in the fridge, it will set from the cold. Judith says that the wafers soak up some of the liquid which also makes them more like a cake. You can also use these cookies in many other no bake recipes and eat them on their own too. They are also great for dessert dips too since they have a light vanilla flavour, so they complement pretty much any other flavour of dessert dip. This recipe isn't actually all that sweet either which is nice. The pineapple is sweet, but it also has a tangy flavour too which balances the flavours out. The best part is this easy dessert only takes 10 minutes to make and then overnight to set in the fridge. So with minimal effort, you'll have a dessert ready to go the next day for whatever you need it for. For this recipe, you'll need a couple of boxes of vanilla wafers, crushed pineapple in its own juice, sweetened condensed milk, fresh lemon juice, whipped topping, coconut or nuts and maraschino cherries for the topping. To make a healthier version of this recipe you could use some gluten-free vanilla wafers from Kinnikinnick foods that could be found at grocery stores. You can then use full-fat coconut milk instead of condensed milk and just take out the water in the can. If you can find coconut cream, that would be even better. For the whipped topping, you can try using Coco Whip from So Delicious which is so close to the real deal. Then, you could use real fruit for the topping instead of maraschino cherries which have a high sugar content.
