Best Stuffed Green Peppers
Trying to think of something tasty, original, and delicious to cook up for dinner tonight? How about this great recipe for Stuffed Green Peppers? These little babies are literally overflowing with goodness, and there’s an amazing tomato topping you can pour over them too!
Green bell peppers, commonly known as green peppers, are actually from the nightshade family, just like potatoes, eggplants, and tomatoes. They come to us from South America like their close cousins, the jalapeño and other chili peppers, and are considered to be one of the healthiest foods on the planet! They’re even healthier when you’re able to grow them yourself or, at the very least, buy organic.
Another wonderful thing about green peppers is that they are naturally decorative and pleasing to the eye – this is why they are so perfect for stuffing! Not only do you have your own very attractive “edible bowl” to eat your dinner from, but it naturally marinates the ingredients with its own unique juices, making the entire meal taste delicious too.
We found this recipe by Judy over at The Southern Lady Cooks blog. Judy is from Kentucky, where they all know how to cook just right, and she’s been cooking up a storm for her family for many years. She credits her mother and her mother-in-law as being the best two cooking teachers she has ever had, and she writes extensively about her experiences with them on her site. Some of the recipes she lists on her blog are of her very own creation, some are totally new, and some she has collected along the way – but she always adds her personal touch. As she says: “I like down home recipes from scratch.” That’s a damned good thing, ’cause we do too!
We’ll bet they still love this recipe for their mother’s stuffed green peppers. Did we mention some of the other ingredients yet? How about yummy ground beef, tomatoes, garlic, and cheddar cheese?!
