Biscuits and Gravy Casserole
Casseroles are excellent meal options when you are a large group of hungry mouths to feed, OR you are the kind of person that likes to plan ahead and have some leftovers ready for the week. I am usually the latter, and find it really rewarding to only have to do big meal cooking once in a while and benefit all week. Plus with a hungry husband it helps if there are things prepared in the fridge that he can just heat up when he wants them.
This recipe from Lemon Sugar, we really do love! It is a true classic with a creamy sausage interior and easy to prepare flaky biscuits on top. The gravy is a mixture of classics like milk and flour (and meat fat) and the combination reminds me of something that my Grandmother would have made and we all would have hoped that there were seconds. It is a great meal served with a tomato and cucumber salad with a tangy vinaigrette and some sliced white onions.
If you are dead set against canned biscuits, you can easily make your own dough and bring this recipe to a new level. This is not necessary though especially if you can find a brand of biscuits that you are comfortable with the ingredients. They are out there, but it does require some time reading the labels and ingredients to make sure you are happy. This biscuit and gravy sausage casserole is best served right away, but it is still delicious the next day upon reheating.
