Blackberry Coconut Cupcakes
Cupcakes are just one of those awesome treats that everyone loves! Try out this great recipe for Blackberry Coconut Cupcakes! There seem to be so many different flavours of cupcakes these days, coconut cupcakes, red velvet cupcakes, carrot cake cupcakes, peanut butter cupcakes... the list goes on and on... Not too long ago, like in the 90s, there were only maybe a handful of flavours, and the only 2 I ever had when I was a kid were chocolate and vanilla cupcakes. Simpler times I guess. But now there are all of these different flavours, its hard to keep up with them all!
These Blackberry Coconut Cupcakes, from Allie, a food blogger over at 'Baking A Moment', look absolutely beautiful, and like they would be super delicious! Blackberry and coconut isn't really a flavour combination I would put together myself, but I bet it would be great! Blackberry season is also here for some parts of Canada, and the United States, so this would be the perfect time to make these too! Allie got the idea for the flavour pairing from her Flavor Bible, yes there is such a thing, and she says it has never steered her wrong, so she thought this one would be perfect for a friend's virtual baby shower!
The cake is a coconut flavour, very light and almost creamy cake, and it is then filled with blackberry jam, then topped with cream cheese icing, and a blackberry with some coconut shreds on top! They look picture perfect in her photos, and the colours are perfect for a baby shower! I bet they taste just as great as they look too! Wouldn't a coconut cake taste great with mango as well?
