Browned Butter Mashed Potatoes

The key to this recipe for Browned Butter Mashed Potatoes lies in the butter. Beurre noisette, or brown butter, is a special preparation that takes a bit of time and effort, but that is used in cakes, cookies, and potatoes (!) and makes every dish taste richer and more buttery. It is relatively easy to make but does require that you keep your eye on the butter because it can burn really easily. To make beurre noisette put the amount of butter called for in the recipe into a good pan. Slowly heat the butter to a boil. Watch the butter as it slowly turns to a deep golden brown. You may see little dots of brown as some of the solids in the butter turn brown more easily. Silt will also collect at the bottom of the pan. Do not worry about that. When the butter is a deep and rich brown, and you can smell the butter, remove it from the heat. Immediately pour the butter into another dish, but do not pour the silt in. Voila! Now you have beurre noisette!
