Butter Pecan Bread
Sometimes it is just nice to have a slightly sweet snack with no frosting or sauce involved to hold it in my hands and munch. This butter pecan bread should fit the bill. It can serve for any number of things including a breakfast on the go (or toasted with butter when you have time to sit), lunch when spread with some cream cheese, peanut butter and a salad on the side, or late in the afternoon when you need a pick-me-up. This quick bread includes Greek yogurt, and so bumps up this bread on the protein scale and adds whole wheat flour to the recipe, bumping up other nutritional aspects. In addition there are pecans, which, as a nut, add a whole range of nutrients, not to mention great crunchy texture to the bread.
