Buttery Pecan Snowball Cookies

This Buttery Pecan Snowball Cookies recipe makes a perfect comfort dessert when you want to eat something that’s easy and quick to make. Sometimes you just need to steer away from an exhausting list of ingredients and painstakingly time-consuming recipes to be able to enjoy simple treats that still taste as delicious. These easy homemade cookies are double-rolled in powdered sugar to make them look like sweet balls of snow. The result is a ball of soft buttery dough that just melts in your mouth. You can also make these cookies and freeze them ahead of time. However, when packing these cookies to freeze, remember to store them in doubled Ziploc freezer bags and place them in sturdy glass containers. On the day of serving them, take the cookies out carefully and put them on the serving trays with a cover on top. Never thaw these cookies in the plastic bags or containers because the excess water will make these cookies runny due to the sugar and ruin the texture. The good part of this cookies recipe is that you can add more ingredients and prepare them the way you want. Like for instance, you can add raisins, dried cranberries or goji berries to make them healthier. You can also add chocolate chips, mint flavor, or a hint of almond extract, or peanut butter for a natural source of protein. On particular occasions like kids’ birthday parties, you can throw these balls in rainbow colored sprinkles or add chocolate flavored marshmallow fluff to coat them. You can even try adding a chocolate drizzle on top to make the cookies look exciting and fun. You can add a tablespoon of rum or brandy into the cookie mixture before you roll them into balls. If you wish, you can also toast coconut flakes to add a touch of nutty flavor to the cookies. Make sure not to burn the coconut flakes while toasting them.
