Caprese Salad with Dressing
Coming up with lunch ideas can sometimes be even more exhausting than making lunch. Here is a great lunch or dinner idea for a Caprese Salad with Pesto Dressing! Caprese salad has to be one of my favourite kinds of embellished salads that has a lot of substance to it. I usually love just pretty plain salads with a nice simple vinaigrette on it, but when it comes to salads with more stuff on them, this would have to be my favourite kind! I love the flavours of the tomato, and the cheese that they use usually a bocconcini either sliced, or in a ball, or buffalo mozzarella is usually the classic italian ingredient people use.
This salad comes from the island of Caprice, hence the name, caprese salad! As I mentioned before, the traditional version of this salad is with buffalo mozzarella, which is a nice soft cheese that usually comes in water or liquid to keep it moist and fresh. They usually make the salad with slices of the cheese layered with slices of tomato and then garnish it with some basil on top, and a little drizzle of extra virgin olive oil. They don't really do much more than that!
In America, people embellish it more, like in this recipe, or drizzle some balsamic vinegar or balsamic vinegar reduction over it with the oil, which does taste really good! With really good tomatoes though, you may not even want the vinegar, and you will see that the oil is more than enough with the cheese and tomato. I love the embellished version too though, it seems like it would be quite good! The basil is made into a nice light pesto for some added amazing flavour, which would be excellent!
