Here is a pretty appetizing bundt cake. I cannot help but chuckle every time I hear the word 'bundt cake' as it conjures up memories of the movie 'My Big Fat Greek Wedding' and the scene with the 'bundt cake'. It is so hilarious. Funny how some things just stick in your mind. There is nothing plain about this bundt cake. The recipe we are sharing from Shugary Sweets is made up of a moist carrot cake from scratch, filled with a sweet cream cheese, and iced with a cream cheese frosting sprinkled with chopped fresh pecan nuts. There you have it, the perfect cake with all the favorites in one bundt.

We all know that carrots are such a good food choice. They are perfect raw or cooked as a vegetable, and it is amazing what they do to a dessert. Not all vegetables can make a place for themselves in a popular dessert. Filled with vitamin-A, beta carotenes, minerals, anti-oxidants and falcarinol, what a perfect food to have the family eating. Carrot are available year round and are affordable, so that also makes them one of the top vegetables consumed. As if they are not diverse enough in cooking and baking, what about how sweet and delicious they are made into carrot juice. The more I think about the carrot, the more I am trying to think of another vegetable can take on such diversity in our diet. Zucchini works in savory and for baking, but not as great as juice...hmmm perhaps the carrot stands on its own in the food world!

When you do a survey of cake flavors chocolate and vanilla lead the way, but as a point of interest, when you go to a bakery to choose a birthday cake, carrot cakes are always an option! Now we will direct you to the 'Shugary Sweets' website just below where you will be able to follow the link to the recipe ingredients and instructions.
