Cheese Scalloped Zucchini

This is a quick and easy dish to make that blends lots of good ingredients to create a vegetable dish for an Italian Cheese Scalloped Zucchini that your kids and every one in the family will line up for, in order to get seconds (and if you are lucky, may be even thirds). In this recipe, two kinds of zucchini, yellow and green, are combined to produce this great dish of scalloped veggies.

Zucchini is an easy to grow vegetable, and it is worth it since it grows almost anywhere and in amounts that will startle you when you see the size that some zucchinis can grow. There have been zucchinis that have grown to be three feet long! But use up your zucchini before it gets that big, as the vegetable loses flavor when it is allowed to grow too long. Zucchini is a great vegetable loaded with plenty of vitamins and minerals that contribute to your good health. Copper, manganese and vitamin C are just some of the vitamins and minerals that zucchini provides.

This dish uses two different kinds of zucchini to make a wonderful combination of vegetables in this dish. As well, a blend of Italian cheeses is added to a cream sauce made from scratch. Your kids and the rest of the family will gobble up these veggies, and there will be no asking the kids to please eat their veggies with this dish.
