Cheeseburger Dip

If you are watching your waist line, plan to eat only one or two bites of this cheeseburger dip. It blends a lean meat, turkey, with so much cheese, it is practically hilarious! And that means a fabulously rich and delicious dip, but not a dish that is particularly friendly to waist lines. Jalapeno peppers and creole seasoning add some bite and flavor to the sultry and rich taste of the cheese, and more bland flavor of the turkey. But it is the loading of cheese in this recipe that makes all the difference, as well as the mayonnaise.

Mayonnaise, when made from scratch, is a really simple dish. It combines egg yolk and oil, in its simplest form. Other seasonings can then be added. But the basic two ingredients of egg and oil combine to create a rich, thick paste that can form the base for all kinds of sauces, and so dips and gravies and so on. It can even work with sweet sauces, if you make it from scratch. And it is too bad that we do not make this great creation from scratch more often. It is quite simple once you get the knack of it, and unbelievably superior to anything commercial that you could buy.

In any event, this dish begins with turkey (plain hamburger could also be substituted or chicken, actually), which is then smothered in lush cheeses and mayonnaise. The richness of this dish is punctuated with spicy Cajun seasonings and jalapeno. All together, this is a dip where you measure how much you are going to eat before you put any on your plate. The temptation to eat far too much of this dish will be irresistible unless you quantify it before you touch a bit of it.
