What is not to love in that? The chicken can be one that you made and de-boned, or for added convenience and to make this even quicker, get the chicken from your grocer, pre-cooked. Either way, it will be delicious. The sharp cheddar cheese is added to chicken stock (your own, or buy it at the grocery store) and the whole thing is heated up to (not beyond) the boiling point.

Consider making fresh biscuits or cornmeal bread to serve with this delicious dish. When we were kids, we usually had peanut butter and jam sandwiches with this soup.
