Cheesy Zucchini Rice

When making meals, sometimes you just need some inspiration to take something from blah to yum! Here is an incredibly easy Cheesy zucchini rice that you and your whole family will love to have as a side or maybe even as a main dish. The author over at Buns in my Oven, said that her daughter absolutely loved it, and didn't really even notice there was a green vegetable in it. The zucchini hides pretty well in this cheesy rice, and since zucchini is so good at soaking up flavors, you would hardly even notice it was there most likely!

It is a pretty simple and quick rice dish to make, and has lots of good cheese and butter in it. You could even try a different kind of good melting cheese if you wanted, just to try a different flavor. The zucchini is shredded up, which helps to disguise it more. You can see in the photos, little flecks of green, but it isn't like it takes over the whole dish, so it's a great way for kids to get some veggies in them without really even noticing. Especially if they are kids that don't really like the vegetables too much.
