Makes 24 Cookies
1/2 cup butter, at room temperature
1/4 cup coconut oil, at room temperature
1/2 cup coconut palm sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups blanched ground almonds (fine)
1 cup dark (70%) chocolate, chopped into chunks
Preheat oven to 350 degrees F.
Line a baking sheet with parchment paper.
Cream together the butter, coconut oil, and brown sugar.
Add the vanilla and eggs, mixing until incorporated.
Mix in the baking soda and salt.
Add the ground almonds, 1 cup at a time, beating well after each addition.
Fold in the chocolate chips with a wooden spoon.
For best results, refrigerate for 30 minutes.

Use a teaspoon to drop spoonfuls or dough about 3 inches apart (they will spread and get thin).
Bake for 11-13 minutes, or until golden brown around edges.
