The recipe includes two members of the allium family, onions and garlic. Both are very nutritious foods, but garlic is especially good. The allium in the garlic oxidizes when it is exposed to air, but both heat and vinegars or lemons will destroy this important anti-oxidant, so when you mince it, let the garlic sit for a few moments to allow the alliinase to begin working. This way you get the maximum antioxidant and anti-inflammatory benefits of this great food. Garlic also has potential to help regulate fat cells. Obesity is beginning to be understood as a problem with inflammation. Garlic has a unique capacity to help regulate the formation of fat cells in our body through an anti-inflammatory component. That means garlic might help our bodies not develop new fat cells, and keep us thinner. The research here is still new, and we have a lot to learn, but garlic is a great food for this reason and many others.
