375g bacon (1 regular package), cut into small pieces
1 clove garlic, minced
2 cup fresh green chickpeas (frozen)
1-(375g) package whole wheat linguini
2 inches leek, diced
Olive oil (for sauteeing)
2 fresh tomatoes, cut into slices (optional)
Bring a pot of water to a boil.
In the meanwhile, place the green chickpeas into cold water to defrost.
In a large frying pan, saute the garlic and leeks until they start to soften.
Add the bacon and continue to cook until the bacon is browned to your liking.
If you want, you can drain the grease into an old tin can or into a pocket of aluminum foil.
(Careful not to throw bacon grease down the sink.)
When the pasta water comes to a boil, add 1 package of linguini and cook for 8-10 minutes or until tender to bite (al dente).
At this point at drain the water from the chickpeas, and throw them into the bacon mix, and stir to combine.
Turn off the heat and cover with a lid until ready to serve.
Drain the water from the pasta, and drizzle in about 1/4 cup of olive oil and 1 teaspoon of salt.
Mix everything together and serve with some fresh tomatoes.
