You are going to discover textures and flavors in this dish, and the dressing will add even more of an Asian flare. Now that it is springtime it is time to gather great recipes that can be enjoyed on hot days.
The one section of this recipe calls for the making the crispy bits from the pre-packaged three-inch wontons. I just happened to have a package of those in the refrigerator that I had purchased to try out the Wonton soup recipe posted a couple days back. I was pretty curious what these would be like fried. I substituted pure virgin organic coconut oil as that is my oil of choice and heated the tiniest bit in a small skillet and just cut up two of those little three-inch squares. As soon as the oil was hot I gently dropped them in and flipped them over and in a matter of 10-15 seconds, they were a golden brown. I placed them on a plate lined with paper towel to absorb the oil and did a taste test plain and then with a sprinkle of Himalayan salt. Okay, all I can say is that it is a good thing I only made two of them because they are super tasty, and I would have eaten everything I cooked.
This is a very nice little cooking idea, and I could see where these would be tasty on many dishes. It is so fun to stumble onto something in a recipe that you can see yourself using.
