How can anything with the word, silk, in its title not be delicious? And thatís just the case with this Chocolate Caramel French Silk Pie. Silky, smooth, creamy, chocolate-y and all layered in a pie. Yum. Before you think that anything French is way beyond your baking vocabulary, stop. Itís not. This pie has a few steps and is layered, thatís true, but the crust is an easy to make Oreo cookie crust, and the rest just takes a bit of time. So plan for this dessert on a day when you plan to be at home and want to try out something new to surprise your family.

One trick to making this pie is the caramel. Caramel can be tricky to get to the right temperature. If you donít bring it up to the right temperature it may be too thin. Leave it too long and you could get a rock hard candy. The easiest way to ensure a perfect caramel is to invest a few dollars in a candy thermometer. It takes all the guesswork out of whether or not your candy is ready to come off the stove. Another trick lies in adding the cream to the butter and sugar mixture. Itís always best to have your cream at room temperature or to warm it up just a bit. Don't get the cream too warm! You donít want to accidentally curdle it.
