Chocolate Chip banana bread muffins
Here is a recipe that takes banana bread to the next level with the addition of some chocolate chips and some toffee pieces. So each bite-sized muffin is filled with sweetness and chocolate with a nice, moist banana bread. Perfect for a little sweet snack or a lighter dessert. Banana bread is a classic recipe that has been around for a number of years. It's said that it first developed in the 1930s when baking soda and baking powder were used in recipes more. This was also during the Great Depression which brought on a need for more affordable recipes, as well as recipes that would use up ingredients so that nothing was wasted. Bananas were one of the more expensive items of the time since they had just begun to be imported into the United States from the South. So since they were a pricier item, people really wanted to use them up, so they didn't waste money by throwing away food. Another great thing about the banana is that it is naturally very sweet when it's ripe, so it adds some sweetness to the recipe. Sugar was always an item that was expensive during the Great Depression too, so if people could use other foods to sweeten their dessert recipes, they would.
By the 1930s banana bread was a very standard recipe to find in most American recipe books. It was usually seen as either a dessert recipe or a breakfast recipe. It was in Pillsbury's Balanced Recipes cookbook in 1933, and then by the 1950s, it gained even more popularity in recipe books like Chiquita Banana's Recipe Book. Chiquita Banana is still one of the main name brands of bananas in the US and Canada. There is even a National Banana Bread day which is on 23 February. If you don't have a chance to eat your bananas before they get too ripe, it's a great idea to put them in the freezer until you can use them in a recipe like this. Frozen bananas also make great smoothies, and they are even great on their own with some fruit or cacao powder to make a delicious, healthy vegan ice cream. Since bananas have a naturally smooth and creamy texture when they are blended, they will create smooth and creamy smoothies and ice creams. Their sweetness will also be enough for the smoothie or ice cream recipes too. Be sure to peel and chop up your bananas then put them in a freezer safe bag before you put them in the freezer. This makes them so much easier to use in your recipes. Just take them out of the freezer and allow them to thaw out before you use them.
This recipe makes 24 muffins and requires about 4 medium bananas which will make about 1.5 cups of mashed banana. The easiest way to mash a banana is to take a banana that's either room temperature, or that has been thawed out, put it in a bowl and then either use a fork or a potato masher to mash it up. If you have a blender, you can use that, or even a handheld electric mixer. Other ingredients you'll need in this recipe include unsalted butter, brown sugar, vanilla, eggs, flour, baking soda, salt, cinnamon, nutmeg, sour cream, chocolate chips and toffee chips. If you want to make this recipe vegan, you can use coconut oil instead of the butter, coconut cream instead of the sour cream and flax eggs instead of real eggs.
