Brownies were first introduced to a recipe book by a woman named Fanny Farmer. Fanny adapted her chocolate cookie recipe to be baked in a rectangular pan, and what resulted was a perfect mix between a cake and a cookie recipe. Brownies are known for being denser than a cake and rich with cocoa and chocolatey flavour. The first easy brownie recipe was featured in the 1896 edition of The Boston Cooking-School Cookbook. But, it was three years before that in 1893 that Bertha Palmer asked a baker to make her and her friends a sweet treat to have at the World's Columbian Exposition, which was a fair held in Chicago in 1893 in celebration of 400 years since Christopher Columbus arrived in what is now known as North America in 1492. The baker obliged and created a cake - like dessert that would be packed into the boxed lunches and be nice and small making it easier to eat than a piece of cake. The dessert was such a hit that Bertha started having them served at the Palmer House Hotel, which was the hotel her husband owned. These brownies had walnuts and an apricot glaze.
