Molten Lava Cakes are so fantastic because they combine what is fundamentally a flourless chocolate cake with a pudding in the middle. The flavor combination of biting into a soft cake and gooey center is unparalleled. The cake may have existed in France for some time, known as Chocolate Moelleux, but it was brought to the USA only in the late 1980s and has gained in popularity ever since then.
Sometimes dishes like this one require specialized cookware; however, in this case, you can make these wonderful desserts in muffin tins. Just be sure to remove them as soon as they can be handled so they don’t stick to the tin. The dessert is often accompanied in various ways. It can have a chocolate ganache poured on top of the cake, or have ice cream or whipped cream served on the side. A bit of fruit, for example, a large strawberry is a great way to let guests politely sop up the ganache (otherwise you will risk people not being able to lift and lick!) that is left behind.
