As the line goes: 'You had me at coconut', or something like that! Then again, I am a serious coconut lover and the fact that this recipe is also gluten and dairy free makes it an A+ in my books. Who doesn't love a classic recipe (coconut cream cake) made healthier and also much cuter in tiny mason jars. Preparing desserts in mason jars is a great way to ease the work load when the dessert hour approaches and you are already done in the kitchen.

With this recipe, you will discover (if you have not already) that you can make whipped cream out of coconut milk. The process is quite simple really an involves chilling a can of coconut few a few hours and scooping off the thick cream that will settle at the top of the can. The liquid from this coconut milk (which will settle at the bottom) can be used in a smoothie OR a new use I have found is to marinate chicken in it and then use the chicken in a nice Thai flavored stir fry..YUM! The coconut whip cream can be sweetened a bit my adding a touch of honey, and then basically you just grab your mixers and start beating to get the thicker fluffy consistency of whip cream.

The base in this recipe is made from crushed gluten free shortbread cookies, but you could use any sort of base that works for you, even crushed nuts will be delicious!
