If you have not had muffins made with corn flour or corn meal before, try this recipe for Cornbread Muffins. If you use corn meal, there is also a very unique texture to the muffins that comes from the coarse texture. This recipe does call for corn meal. Do not substitute corn flour, which is much more finely ground. You will miss the lovely texture that the corn meal can contribute to the muffins.
