Cranberry Almond Coconut Macaroons

This Cranberry Almond Coconut Macaroons recipe promises a tangy, sweet and crunchy variation of the traditional macaroon. These cookies are pretty and fabulous. Make them with unsweetened cranberries as well as unsweetened coconut. They will be much less sweet, and still every bit as fabulous. Also try to find unsweetened coconut that is diced in to slices rather than shredded. The slightly larger piece improves flavor and adds great texture to this cookie.
