Cream Cheese Banana Nut Bread
I am the world’s biggest sucker when it comes to banana nut ANYTHING. They are definitely among my top favourites when it comes to muffins, loafs, I recently even tried a banana nut scone and it was to die for, but Comfortable Food has truly shown me the light with the featured recipe for Cream Cheese Banana Nut Bread!
I have been a fan of putting cream cheese on my banana bread for a while now anyways, but cream cheese baked right into the bread itself, genius! The “bread” with the added cream cheese now borders on cake. I like my banana bread dense and moist to begin with, but the cream cheese adds an element and a texture to this classic bread recipe that really takes the experience to a whole new level. Golden brown on top, creamy, banana and walnut filled centre, if it were legal to marry a loaf of banana bread in my country, I would seriously consider it for this one.
For me, the kicker for this particular recipe is the toasted walnuts. For those who don’t know the otherworldly pleasure that is toasted nuts, they are just inarguably and absolutely a cut above untoasted ones. The flavours that are released by the natural oils in nuts when you expose them to oven heat is almost indescribable if you’ve never experienced it. They are smokier, sweeter and many of the tough, natural fibres that make a nut, well, a nut, are broken down by the heat giving it a whole new texture in your mouth.
Prep time is about 20 minutes, cook time, an hour at 350, or, as per usual, until a toothpick poked through the middle comes out clean. Making sure you give the bread ample time to cool and set is paramount otherwise you might end up with a banana nut crumble instead of a solid, dense, delicious banana nut bread.
