Creamy Cheesy Chicken and Rice Casserole
When you're gluten sensitive or intolerant, you're always on the lookout for great gluten free recipes. Luckily, Kristen from Iowa Girl Eats shares a lot of great dinner recipes that are gluten free including this one for Gluten-free Salsa Verde Chicken and Rice Casserole. This is also a total comfort food, with a creamy consistency and savoury flavour. Creamy chicken and rice is always an awesome combination, and it's synonymous with comfort food. So many people love chicken and rice as a meal which is why Kristen decided to make this great dinner recipe for a cheesy chicken and rice casserole. This recipe also has a bit of a Mexican flavour as well with the addition of some salsa verde which is green salsa. The long grain white rice is cooked in the salsa verde giving it a nice, tangy flavour, as well as some chicken broth giving it a richer flavour too. Then it's mixed with the sauteed chicken and green chillies with a delicious cheese sauce. Salsa verde is green because it's made with tomatillos and cilantro which are both very green. It's not too spicy of a salsa either which is nice for those who don't enjoy too much heat.
To make this epic gluten free casserole recipe you will cook the rice first in chicken broth and some salsa. You can start doing this to all of your rice for any recipe you're making and you'll see it just adds so much flavour to any recipe. While the rice is cooking you can cook the chicken breasts in some olive oil in a pan. Chop up the chicken before you add it to the warm pan and cook it all the way through. Then add in some garlic and chillies to cook for a little bit longer. To make the cheesy sauce you will use some gluten free flour with some milk and then add in the cheese. She uses Monterey Jack cheese in her recipe. Once the ingredients are all mixed, you can then add in some sour cream as well which will really thicken the sauce and make it even more rich and flavourful. You can use dairy-free options of all the dairy ingredients too if you like, but just remember the amounts and flavours will vary.
Once your sauce is all ready, add the rice and chicken into the sauce and mix it well. Then, prepare a baking dish by greasing it and then pour the mixture into the pan and sprinkle even more Monterey Jack cheese on top to broil in the oven until the cheese is bubbling and browned. When it's all done, cut into pieces and serve with some cilantro on top. For a dairy-free version of this recipe you can use almond or coconut milk with some Daiya cheese, or you could also make your own cheese out of almond flour and lemon juice or apple cider vinegar. There are many recipes for vegan cheese sauces on the internet so you can choose the one that appeals most to you and try it out. If you don't eat meat, you could substitute the chicken for some hearty vegetables like zucchini and potatoes which would also taste really great in this cheesy sauce.
