Creamy Garlic Chicken

This recipe uses whole garlic, and when you see the fantastic photos you may think that there is too much garlic. Is the entire globe (or head) of garlic in there? Don’t fear. You will also notice that the garlic cloves are uncut or un-smashed. When garlic is cooked this way, the flavor mellows and sweetens and becomes so rich and good that it can be crushed or mashed after it is cooked and smeared on bread or crackers. So in this recipe, the garlic will gently infuse the chicken, and not over power it.

One way to try garlic and to get all of its nutritional benefit and fantastic taste is to take the globe or head of garlic, smear it with olive oil, and then bake it up. Only once it is baked do you remove the sweet and creamy flesh from the individual cloves. Keep that in the fridge. You can cook with it, of course, but it is fabulous served as is, or with olive oil, lemon and salt. Try it with crackers and olives and it will become your family’s new favorite TV snack. And you can feel good about them eating such a great food.
