Creamy Home Made Potato Soup
A nice, warm bowl of homemade soup on a cold day is just what you need. This Creamy Home Made Potato Soup from Grandma's recipe collection is sure to warm you up from the inside out. There are so many great soup recipes, but a potato soup is a classic. Enjoying the creamy taste of potatoes and cream with other vegetables added in is pure heaven. This healthy homemade soup recipe would be great to make a big batch of and then freeze to enjoy in the future to enjoy for homemade lunches and dinner side dishes. Other easy soup ideas include adding some bacon to this potato soup, or perhaps some chicken for some extra protein. You can even make it a vegan soup by using a nondairy cream made from cashews or almonds. Make sure you have a good handheld blender to blend the soup up so there are no chunks in it. A stand up blender also does the trick just fine.***

4 large potatoes, peeled and rinsed
1 large, diced onion
1 Tablespoon butter
4 celery sticks, diced
2 carrots, peeled and diced
4 cups chicken stock
1/2 teaspoon fresh thyme, chopped fine
1 teaspoon dill, chopped fine
1 Tablespoon parsley, chopped fine
2 Tablespoons all purpose flour
1 teaspoon salt
1 cup milk
salt and pepper to taste
Optional *Dumplings - not shown in the picture
1/2 cup all purpose flour
1/4 cup milk
Cut potatoes into small bite sized pieces.
Heat a large soup pot to medium heat, melt butter and fry the onions, celery and carrots for 3-5 minutes.
Add in potatoes and chicken stock with enough water (if needed) to cover potatoes by one inch. Bring to a boil then reduce heat to simmer.
Stir in the freshly chopped dill, thyme and parsley.
Cook for 20 minutes or until potatoes are tender.
To cream the soup, in a small bowl, use a fork to mix 2 tablespoons of flour and salt with cold milk until no lumps are left. Stir milk mixture into the soup and bring to a boil to thicken soup. Season with salt and pepper to taste.
To make the dumplings, in a bowl combine the flour, egg, salt and 1/4 cup milk. Drop the dough mixture, a teaspoonful at a time into simmering soup. Do not stir until dumplings begin to float.
Optional: Serve with bacon bits and chopped green onions.
