This Mexican pasta salad recipe recommends using Rotel brand of canned tomatoes, which come in different varieties, each combined with a particular kind of chilli pepper. If you can’t find Rotel tomatoes where you live, you can substitute with another variety of canned diced tomatoes. If you want the spicy taste that Rotel infuses with its canned tomatoes, you could add your choice of finely chopped chilli pepper. Add a jalapeno pepper without seeds to your salad recipe if you want just a little heat, but if you want a slightly hotter taste, mix a few seeds into the salad as well.
