Crock Pot Chicken & Barley and Creamy Potato Soup
On the cold fall and winter days, there is truly nothing like a crock pot meal recipe. It is just so easy and satisfying in the morning to layer your crock pot with nutritious ingredients and then smell the aromas mixing and dancing together throughout the day to create a masterpiece by dinner time. This nutritious crock pot recipe is high in protein, vitamin B, Vitamin A, fiber and many other nutrients helpful to ward away colds and flus during the cold months of the year. The chicken in this recipe is added as whole breasts and then later on removed and shred and added back. This hearty healthy crock pot recipe will satisfy even the hungriest of family members and will last for left overs if you are just cooking for 1 or two. This is a freezable recipe also and you can have many meals for weeks to come if you are preparing it for one person.
1L oz boxed cream potato leek soup (organic)
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 small chicken breasts (about 12oz)
3/4 cup regular barley (not quick-cooking)
1 onion, chopped
4 cups chopped kale
1 large sweet potato, peeled and cut into 1/2" cubes
1 large regular potato, peeled and cut into 1/2" cubes (I used Yukon Gold)
3 carrots, peeled and sliced
Add boxed soup, garlic, Italian seasoning, salt, and pepper into the crock pot then stir to combine.
Layer in chicken, barley, onions, kale, potatoes, and carrots.
Do not stir.
Press veggies down to cover with chicken broth then cook on low for 5-6 hours or until barley is tender.
Remove chicken breasts, shred, then return to the soup and stir to combine.
