Crock Pot Irish Guinness Beef Stew

Baby potatoes are recommended (perfect) but the recipe suggests that you can also reduce the amount of potatoes by one half and substitute rutabaga, turnip, and/or parsnips. Rutabaga is slightly sweet, as is cooked turnip and parsnips. Try rutabaga if you are not familiar with these root crops. They are delicious.
The soup is easy to make. Be sure to fully cook the olive oil, onion and garlic as the recipe shows and then add the liquids including the beer. Be sure to scrape the bottom of the pan you cook these ingredients in to get up all that lovely flavor from the bottom of the pan. Do not leave it behind.
