Crock Pot Irish Guinness Beef Stew

This recipe is a fabulous Crock Pot Irish Guinness Beef Stew. This stew, if you have not had it before, is made great by the addition of the Guinness beer. Do not skip this ingredient if you decide to make this stew. It makes all the difference to the flavor of this fabulous dish. Baby potatoes are recommended (perfect) but the recipe suggests that you can also reduce the amount of potatoes by one half and substitute rutabaga, turnip, and/or parsnips. Rutabaga is slightly sweet, as is cooked turnip and parsnips. Try rutabaga if you are not familiar with these root crops. They are delicious.

The soup is easy to make. Be sure to fully cook the olive oil, onion and garlic as the recipe shows and then add the liquids including the beer. Be sure to scrape the bottom of the pan you cook these ingredients in to get up all that lovely flavor from the bottom of the pan. Do not leave it behind. Let this part of the recipe simmer for several minutes before transferring every thing to the crock pot. Once this dish starts to simmer in the crock pot, the hard part of this dish is over.

This dish takes a few minutes to prepare and make properly, but it is so worth the rich and flavorful result. For a more soup like consistency, simply omit the tapioca. You may want to wait until the dish is quite cooked before you add any thickener (that is the purpose of the tapioca). That just gives you some control over how thick the sauce is.
