Crunchy Salt Water Potatoes

There are so many different ways to cook potatoes, and they are all so good too. Baby potatoes are sometimes even tastier than regular sized potatoes because they pack a lot of flavour into a little bite size. You can cook these baby potatoes just as you would cook any other potatoes too; they may just take less time to cook up too. Some potatoes recipes have you boil the potatoes, like this recipe for crunchy salt water potatoes. Instead of just boiling the potatoes in plain water or roasting them in the oven, you will add a lot of salt to your water when you boil them. You will also boil the potatoes until the water in the pot evaporates. So unlike the other potatoes recipes that just have you boil the potatoes until they are tender, you actually allow all of the water in the pan to evaporate, so the potatoes are left crunchy and crusted in salt. Cooking the potatoes using this recipe will result in a thin, crispy skin and a creamy soft inside. Then, that's not all; you can go a step further and roast them with some butter and herbs for 20 minutes. This does make for a longer cooking time, but it is so worth it. The entire recipe takes about 1 hour 30 minutes to prepare, and it will serve 4 people.

Of all the different ways to cook potatoes, this might just end up being your favourite. All you need is 2 pounds of baby potatoes. Make sure they are well-scrubbed and rinsed. You'll also need your salt, 12 Tomatoes recommends kosher salt for a healthier option, and you could even use Himalayan salt or sea salt if you like. These types of salt are healthier for you than regular table salt because they still have a ton of minerals in them, unlike table salt where the minerals are extracted during processing. You will also need some minced garlic, chives, parsley, rosemary and some unsalted butter. Preheat your oven to 400º F then put the potatoes into a big pot with water just until they are covered. Pour in the salt and stir and bring to a boil. Once they've reached a boil, reduce the heat to low and then allow them to cook until all of the water is gone. You'll also see the salt crystals covering the potatoes. You will then rinse the potatoes off and mix the garlic and herbs up then melt it all and pour the mixture over the potatoes leaving some for after they are roasted.

Then you can put the potatoes in the oven for 20 to 22 minutes and when they are finished roasting put them on plates and pour some more of the butter over them. These would be great served with some grilled meat and vegetables, or they would also be great served with a simple garden salad for a fresh, healthy meal. If you want to make this recipe even healthier, you could opt for some coconut oil instead of the butter. Coconut oil is actually very good for you and has healthy fats that are easily digestible.
