Double Chocolate Zucchini Cake

This is a quick and easy cake to make that helps use up some of that zucchini you have been growing in this Double Chocolate Zucchini Cake. Zucchini does not add so much flavor as it adds texture and body to a cake. It is a bit like other vegetables, such as potato and carrot that are often added to cakes, cookies and breads. This method is as much about adding moisture as it is about flavor. For chocolate based cakes, moisture can be a real issue since chocolate tends to dry out whatever it is added to. So the zucchini is a great way to keep it moist. Other things that help include using oil as well as butter in this recipe. Be sure the oil is one without a lot of additional flavor. So don’t choose olive oil, but try safflower or sunflower oil. As well, the buttermilk not only adds lift but also moisture to the recipe, so this cake will be wonderfully tender and good.

Chocolate is always a great favorite in whatever recipe where it is found. This one uses chocolate in the recipe and on top, for extra impact. So the chocolate flavor will be rich and strong. Yet there is no icing for this cake, so it can be a great snacking cake. Leave it out, sliced, for the kids to grab a piece when they are on the go, and for you to enjoy late in the day when you have a tea or coffee break. These kinds of cakes are perfect for those times when you want something a little bit sweet but not too much so.

Double Chocolate Zucchini Cake is a lovely cake with chocolate, zucchini and other ingredients that make this a tasty, moist and sweet snack to make for you and your family. Double the recipe, and freeze one of them for those times when you just don’t feel like baking, but would like a sweet treat.
